Sourdough bread is my favorite thing to make and to eat! But there are many times when I make a homemade loaf, and I just can't eat it fast enough and it ends up being a few days old and no longer fresh to eat. Instead of tossing it out, I consider these creative and delicious ways to give new life to my leftover sourdough!
1. Make Sourdough Croutons
Croutons are a fantastic way to add crunch to your salads and soups. Simply cut your sourdough into cubes, toss them in olive oil, and season with your favorite herbs and spices. Bake in the oven at 375°F (190°C) for about 10-15 minutes until golden brown. Store in an airtight container, and you'll have a handy addition to many meals.
2. Whip Up Some Sourdough Breadcrumbs
Breadcrumbs are a versatile pantry staple, perfect for breading chicken or fish, topping casseroles, or adding texture to meatballs and meatloaf. To make them, tear your sourdough into small pieces and bake at a low temperature until completely dry. Then, pulse in a food processor to your desired consistency. Store in a jar or freeze for longer shelf life.

3. Prepare Sourdough French Toast
Transform your leftover bread into a breakfast delight with French toast. Whisk together eggs, milk, cinnamon, and vanilla extract. Dip slices of sourdough into the mixture and cook on a greased skillet until golden brown on both sides. Serve with syrup, fresh berries, or a dusting of powdered sugar for a delightful morning treat.
4. Craft a Sourdough Bread Pudding
Bread pudding is a classic comfort food that’s perfect for using up stale bread. Tear your sourdough into chunks and soak in a mixture of milk, eggs, sugar, and vanilla. Add in your favorite fruits, nuts, or chocolate chips. Bake until the pudding is set and the top is golden. Serve warm with a drizzle of caramel sauce or a scoop of vanilla ice cream.
5. Make a Hearty Sourdough Panzanella Salad
Panzanella is a traditional Italian salad that turns stale bread into a flavorful meal. Cube your sourdough and toss with ripe tomatoes, cucumbers, red onions, and basil. Dress with olive oil, red wine vinegar, salt, and pepper. Let it sit for a bit to allow the bread to soak up the flavors. It’s a refreshing and hearty dish perfect for warm weather.
Leftover sourdough bread is far too good to waste. With these ideas, you can transform your slightly stale loaf into a variety of delicious dishes! Enjoy!
